Ingredients
. 2 liters full-fat milk
. 1/2 cup sugar (adjust to taste)
. 1/2 tsp cardamom powder
. 1/4 cup chopped pistachios
. 1/4 cup chopped almonds (optional)
. Few strands of saffron (optional)
. 1 tbsp rose water (optional)
Step-by-Step Instructions
Step 1: Boil the Milk
Pour milk into a heavy-bottomed pan and bring to a boil over medium heat. Stir occasionally to prevent sticking.
Step 2: Reduce the Milk
Lower the heat and simmer, stirring frequently until milk reduces to almost half (45–60 minutes). This slow cooking creates the creamy layers.
Step 3: Add Sugar & Flavors
Add sugar, cardamom powder, and saffron strands. Simmer for 10–15 minutes so the flavors blend.
Step 4: Add Nuts & Creaminess
Stir in chopped pistachios and almonds. For extra creaminess, add 2–3 tbsp khoya (optional).
Step 5: Cool & Serve
Let Rabri cool to room temperature, then refrigerate for at least 2 hours. Serve chilled with extra nuts or rose petals for garnish.
