Inspired by these experiences, I recreated Pad Thai at home, so you can enjoy this iconic Thai street food in your own kitchen!”


Ingredients


. 200g rice noodles

. 200g shrimp or tofu (vegetarian option)

. 2 eggs

. 3 cloves garlic, minced

. 1 cup bean sprouts

. 3 tbsp fish sauce (or soy sauce for vegetarian)

. 1 1/2 tbsp tamarind paste

. 2 tsp sugar

. 2 tbsp oil

. 2 tbsp roasted peanuts, crushed

. 1 lime, cut into wedges

. Fresh cilantro and green onions for garnish


Step-by-Step Instructions



Step 1: Prepare the Noodles

Soak rice noodles in warm water for 20–30 minutes until soft. Drain and set aside.


Step 2: Make the Sauce

Mix tamarind paste, fish sauce, and sugar in a small bowl. Adjust sweetness or tanginess to taste.


Step 3: Cook the Protein

Heat oil in a wok or skillet. Add shrimp or tofu and cook until done. Remove and set aside.


Step 4: Stir-Fry the Noodles

Add garlic to the pan, sauté briefly, then add noodles. Pour in the sauce and stir-fry for 2–3 minutes.


Step 5: Add Eggs

Push noodles to one side, crack eggs into the empty side, scramble, then mix with noodles.


Step 6: Combine Everything

Add cooked shrimp/tofu, bean sprouts, and half of the crushed peanuts. Stir to combine.


Step 7: Serve and Garnish

Serve hot, topped with remaining peanuts, fresh cilantro, green onions, and lime wedges.
