THE STORY BEHIND THIS RECIPE


During a recent trip to Italy, I visited a small family-run trattoria in Bologna. Watching the chef layer fresh pasta, rich meat sauce, and creamy béchamel was mesmerizing. Inspired, I recreated this classic lasagna at home—a dish that’s comforting, cheesy, and perfect for family dinners.

INGREDIENTS


For Meat Sauce:


. 500g ground beef

. 1 onion, finely chopped

. 2 garlic cloves, minced

. 1 can (400g) crushed tomatoes

. 2 tbsp tomato paste

. 1 tsp dried oregano

. 1 tsp salt

. ½ tsp black pepper

. 1 tbsp olive oil

For Béchamel Sauce:


. 3 tbsp butter

. 3 tbsp all-purpose flour

. 2 cups milk

. Salt and pepper to taste

. Pinch of nutmeg (optional)

For Assembly:


. 9–12 lasagna sheets (pre-cooked or no-boil)

. 2 cups shredded mozzarella cheese

. ½ cup grated Parmesan cheese

. Fresh basil leaves (optional)


METHOD / STEP-BY-STEP COOKING


1. MAKE THE MEAT SAUCE


Heat olive oil in a pan. Sauté onions and garlic until soft. Add ground beef and cook until browned. Stir in crushed tomatoes, tomato paste, oregano, salt, and pepper. Simmer for 20–25 minutes until thickened.


2. MAKE THE BÉCHAMEL SAUCE


Melt butter in a saucepan. Stir in flour and cook for 1–2 minutes. Gradually whisk in milk until smooth. Cook until slightly thickened. Add salt, pepper, and a pinch of nutmeg.


3. ASSEMBLE THE LASAGNA


. Preheat oven to 180°C (350°F).

. Spread a layer of meat sauce in a baking dish.

. Add a layer of lasagna sheets.

. Spread béchamel sauce over the pasta.

. Sprinkle mozzarella.

. Repeat layers until all ingredients are used, finishing with béchamel and mozzarella on top. Sprinkle Parmesan.


4. BAKE


Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden and bubbly. Let rest for 10 minutes before slicing.
